It’s been too long since I’ve posted something here. Somehow it just didn’t happen. Here’s a great lunch or late afternoon bite as suggestion to make up for it :)
There are a couple of elements that make toast great. Toppings! Something that balances the crispiness of the toast while enhancing it too.
Where to find this? To me the answer lies within a BLA toast. A twist on the classic Bacon Lettuce Tomato (BLT). Instead of using tomatoes, I use Avocado. And sometimes I like to use pancetta instead of bacon. Rather actually. Which would make it, in fact, a PLA. Join me in making PLA’s and BLA’s.
You need:
- Avocado, sliced
- Cucumber, sliced with some freshly ground pepper
- Lettuce
- Pancetta or bacon
- Bread (slices)
- Let the pancetta get its crisp on in the oven on 200 C
- Toast your bread
- Top with a lettuce leaf, cucumber slice, avocado and pancetta. If you want to, you can keep stacking in the same order until you’ve build some kind of a club sandwich.
If you find it a little dry, you can use mayonnaise as spread on the toast first. I’m satisfied with the creaminess of the avocado. Besides, I don’t need the extra calories ;)
